HARDNECK GARLIC (Allium sativum ssp ophioscorodon)
Cloves are bigger and easier to peel than softnecks found in most grocery stores. Also, hardnecks have deeper more interesting flavors.

Brown Tempest

Purple bulb has a nice shape and medium size; clove is husky-brown
with a slight rosy blush. Approximately 6 cloves per bulb. The flavor is fiery when eaten raw, but the burn

SHALLOT ONIONS (Allium ascalonicum)
Considered to be the gourmet member of the onion family, shallots have a coppery skin and purple-tinged white flesh. They have a more delicate,
garlicky flavor than other cooking onions and are a common ingredient in French sauces. Many people find them too hot to eat raw.
French Grey Shallots

These are the true shallots of France. Highly esteemed by gourmets,
who consider Greys best for French cuisine. The bulbs are pear-shaped, creamy purple within, having unusually tough,
dusky-gray outer skins. They have a terrific flavor. Sorry, sold out. Please check back next year.

Dutch Red Shallots

This is a variety with a red skin and a red to purple inside. It has a nice raw
taste and cooks to a delicious light flavor. Larger than French Grey Shallots and also stores better.

Fresh Garlic Scapes
 |

Scapes are the flower stalks of hardneck garlic. They are removed to push
the plant's energy into the bulb. The unopened flower heads are considered a delicacy, tasting like young green garlic.
The flower stalks usually appear in late May and are available fresh for a short period in early June. They are delicious
fresh or sauteed.
